Director of the Center for the Study of drugs at the University of Minnesota, Robert Vince and colleagues conducted a study which revealed that diacetyl is associated with respiratory diseases and other health problems in people in the factories that produce popcorn, and other products with sweeteners. In addition to popcorn, diacetyl is used in the manufacture of margarine, different kinds of chips, crackers and the like snacks, sweets, bakery products, pet food, beer, some wines, etc.

It was found that its structure is similar to diacetyl substances that cause beta-amyloid proteins stick together in the human brain. This accumulation is the hallmark Alzheimer . These studies are published in the journal Chemical Research in Toxicology.

It is proved that diacetyl increases the accumulation of beta-amyloid. And these hazardous occupations in constant contact with the sweetener has a toxic effect on the growth of nerve cells that laboratory experiments showed.
