Ingredients:
4 cups chilled vegetable broth
2 cups chopped tomatoes
1, 5 cups of finely chopped sweet onion
1, 5 cups sliced and peeled cucumber seeds
1 cup finely chopped bell pepper
1/4 cup chopped fresh parsley
2 tablespoons fresh lime juice
2 tablespoons fresh lemon juice
2 tablespoons of vinegar
1 tablespoon olive oil
1 teaspoon dried basil
1 teaspoon honey
1/4 teaspoon ground cumin
2 cloves garlic, minced
Preparation:
Combine all ingredients in a large bowl. Place 4 cups vegetable mixture resulting in a blender or food processor and grind until smooth. Again Put mashed potatoes in a bowl and mix with the remainder of the mixture. Cover and refrigerate.
